MasterChef Singapore winner Derek Cheong has added another concept to his growing food portfolio with Gepuk Guys, a new stall at Jofa Coffeeshop in Bedok North. Following the success of Berempah Bros, the new concept puts a spotlight on Indonesian-inspired ayam gepuk — turmeric-marinated fried chicken that is lightly smashed after frying and served with rice and sambal. The menu starts from S$9.90, with diners able to choose from several proteins and accompaniments.
The signature Ayam Berempah Gepuk (S$9.90) comes with rempah-spiced fried chicken, coconut rice, crispy fried spinach, a fried egg with kecap manis, mushroom berempah, creamy cashew sauce and the stall’s signature gepuk sambal. Other options include Fish Berempah Gepuk, Grilled Squid Gepuk and Unagi Berempah Gepuk, while the Duck Confit Berempah Gepuk is the most indulgent choice at S$16.50. There is also a Lemak Series featuring familiar Berempah Bros favourites.
While ayam berempah and ayam gepuk share similarities, the two have distinct preparations. Ayam berempah is marinated with aromatic spices such as lemongrass and turmeric before being fried with seasoned crumbs, while ayam gepuk is typically battered, fried, lightly smashed and paired with a nutty sambal. At Gepuk Guys, that distinction provides the foundation for a new take on the flavours already associated with Cheong’s first hawker concept.
