Newly opened, Katsu by Kyu is a Korean-inspired tonkatsu concept built around premium Jeju pork, fresh-milled Korean rice prepared in-house every morning, and the belief that time is an ingredient.

Located at OUE Downtown Gallery, the 44-seat restaurant combines Japanese tonkatsu precision with Korean ingredients, sourcing philosophy, and aesthetics.

The Main Ingredients: Where The Difference Begins
Jeju Pork (10 Day Dry Aged)
Only Jeju pork is used at Katsu by Kyu. Premium Jeju pork was introduced to Singapore in December 2025, making Katsu by Kyu one of the rare restaurants to serve it.
The environment and rearing conditions of Jeju Island produce pork that is distinctly different from standard commercial pork. Jeju pork contains a higher proportion of red muscle fibres, which are denser, more oxygen-rich, and naturally more flavourful. The result is meat with greater depth of flavour, firmer texture, and a more satisfying bite.
Each cut undergoes 10 days of dry aging, a process that concentrates flavour while enhancing tenderness. Moments before serving, the pork is finished over rice-straw charcoal, developing a distinctive crisp, lightly charred exterior.
On the first bite, the crust shatters to reveal meat that remains juicy and tender within. The combination of Jeju pork, dry aging, and charcoal finishing creates a tonkatsu experience defined by deeper flavour, richer texture, and greater complexity.
Special Grade Korean Brown Rice with Rice Card Traceability
The restaurant uses Samgwang (삼광), one of Korea’s most highly regarded premium rice cultivars, sourced at Special Grade (특등급), the highest classification for Korean rice. Known for its soft texture, gentle chew, natural sweetness, and clean aroma, Samgwang is widely prized for its eating quality.
To preserve freshness, the rice arrives with its protective outer layer intact and is milled fresh each morning before service, helping retain its natural sweetness, aroma, and texture until shortly before cooking.
Every bowl is then cooked to order in a traditional Korean Gamasot (cast-iron pot), visible from the counter. Guests at Katsu by Kyu can watch each pot being prepared and cooked throughout service.
Every service is accompanied by a Rice Card documenting the rice variety, origin, and date of milling, offering complete transparency on the grain being served. A small but meaningful detail, it reflects Katsu by Kyu’s belief that rice deserves the same level of attention as the pork itself.
Custom Panko Breading
Panko mixed with freshly milled rice powder replaces standard breadcrumbs. This technique creates a unique, richer crust that shatters with superior crispness, a refinement most tonkatsu restaurants don’t attempt.
Tiger Prawn
Instead of regular prawns, Katsu by Kyu uses tiger prawns for their firmer texture, meatier bite, and naturally sweeter flavour. Each prawn is individually hand wrapped in delicate shredded kadaif pastry before being fried until golden crisp and served with a house made dipping sauce.
The result is a light, airy crunch that contrasts beautifully with the succulent prawn within.
