Tokyo’s celebrated sushi institution, Ginza Sushi Arai, has made its international debut in Singapore with a newly opened outpost at Parkroyal Collection Marina Bay. Founded by master chef Yuichi Arai, the Ginza original is a six-time Tabelog Gold Award recipient and one of Tokyo’s most sought-after omakase destinations, revered for its disciplined Edomae approach and deep respect for seasonality, sourcing, and technique.
The Singapore outpost stays true to the philosophy of the flagship, offering a traditional omakase experience built around seafood flown in daily from Toyosu Market. Tuna takes centre stage, selected in close collaboration with specialist suppliers such as Yamayuki, with cuts and preparation adapted to reflect seasonal nuances. Rice receives equal attention, with vinegar blends and temperature calibrated to harmonise with each piece. At the counter, chef Junpeng Wang executes the menu under Arai’s guidance, working with the same suppliers and techniques that define the Ginza restaurant.
Designed by Minoru Oyamatsu of Oyamatsu Design Studio, the intimate space features an eight-seat sushi counter and a private dining room, framed by minimalist Japanese design and crafted with Kiso hinoki and Kitayama cedar by Japanese artisans. From July to September each year, chef Arai will be in Singapore to personally serve diners, while chef Wang leads the kitchen year-round — carrying forward an omakase style that balances precision, personality, and a quiet confidence shaped by tradition.
