Unagi Yondaime Kikukawa, a celebrated Japanese restaurant with a 93-year legacy, is set to open in Singapore this April in partnership with Les Amis Group. Founded in 2017 by Nakasho Shoten, a multi-generation unagi wholesaler with roots dating back to 1932, the restaurant brings its renowned kabayaki-style unagi to Orchard. Known for only using live unagi, Nakasho Shoten supplies some of Japan’s most prestigious unagi establishments, and now, Singapore is about to experience the excellence that has earned the brand a global presence with 33 outlets across Hong Kong, Taiwan, Thailand, Korea, and China.

The Singapore outlet, located at Shaw Centre, will be a haven for unagi enthusiasts, offering a masterclass in unagi preparation. Fourth-generation chef-founder Kikukawa Yuhei ensures that each eel is expertly grilled, using Japonica eels that are filleted and cooked over binchotan coals. The kabayaki technique, which crisps the skin with intense heat and finishes with a gentle low heat, creates the perfect balance of smoky, caramelised exteriors and soft, tender flesh. The signature Ippon unagi, served whole in handcrafted Minoyaki tableware, is a regal dish that reflects the restaurant’s commitment to both tradition and quality.

For a truly immersive experience, Unagi Yondaime Kikukawa offers the regional specialty Hitsumabushi, a Nagoya dish that allows diners to enjoy unagi in multiple ways. Starting with the eel on its own, patrons can progressively add warm dashi broth and rice, creating a layered, ochazuke-style experience. Opening on April 15, the 58-seat restaurant promises an exceptional dining experience, elevating Singapore’s unagi scene with a taste of Japan’s rich culinary heritage. This is one unagi destination that won’t stay under the radar for long.
