Kappo Suguru has settled into a cosy shophouse at 192 Joo Chiat Road, bringing the team behind Suguru Home Dining into a more intimate restaurant setting. The space is centred around a compact counter, giving diners a front-row view of the chefs as they work through traditional kappo techniques. The venue operates as two concepts throughout the week, with Kappo Suguru from Sunday to Tuesday and Suguru Sushiya from Wednesday to Saturday, creating a small-scale Japanese dining destination in the East.
Kappo Suguru serves seasonal omakase menus starting from S$180++, with the 11-course seasonal menu showcasing a contemporary interpretation of traditional Japanese cuisine. The meal moves through chilled somen with tomato granita and botan ebi, cold chawanmushi with scallops, seasonal sashimi, hassun, soup, and a signature stuffed chicken wing packed with scallops, wild shrimp, iburigakko and shiso. Later courses include steamed longtooth grouper in a sour and spicy sauce, seasonal vegetable tempura and a generous donabe rice cooked with kinki fish, shirasu, charred corn and ikura. The main course offers a choice between Kansai-style grilled unagi and tallow-aged A5 wagyu, followed by seasonal dessert.
With only counter seating, Kappo Suguru is best suited to smaller gatherings and leisurely meals rather than large groups, adding to its intimate character. Despite the refined techniques and premium ingredients, the atmosphere remains relaxed and approachable, without the formality often associated with high-end Japanese omakase. The combination of close-up chef interaction, seasonal cooking and a laid-back setting makes the Joo Chiat space a distinctive addition to the neighbourhood’s growing dining scene.
