Actress-turned-baker Jeanette Aw has reopened her patisserie Once Upon A Time at a new location in Geylang, following the closure of its previous Jalan Besar outlet. The bakery, known for its artisanal and seasonal bakes, now operates from a small pickup-only space tucked along the back lane of the building, continuing the brand’s quiet, made-to-order approach rather than functioning as a walk-in café.
Once Upon A Time works strictly on a preorder basis, with no fixed daily menu. Instead, each release focuses on limited seasonal items, with past favourites including fudge brownies, chocolate olive oil cakes, banana cakes, snowskin mooncakes, and small-batch desserts announced in drops. The concept reflects Aw’s background in professional pastry training, after completing her diploma at Le Cordon Bleu Dusit in Bangkok and further training in Tokyo before launching the bakery in 2021.
Although the physical store has changed locations, the brand’s format remains the same — small production runs, online orders, and occasional special releases. Over the years, the patisserie has also held overseas pop-ups in Japan, building a following beyond Singapore. With the new Geylang space, Once Upon A Time begins a quieter new chapter, keeping its focus on handcrafted bakes, seasonal ideas, and limited-edition drops rather than a traditional retail bakery setup.
