The Singapore Martini Club takes a deliberately liberal approach to one of cocktail culture’s most debated classics, with more than 50 martini expressions spanning gin, vodka, tequila, sake and plenty of unexpected ingredients. Set inside a vintage train carriage-inspired space in Orchard, the new bar turns the traditional martini into a playful journey rather than a rigid formula.
The menu is structured like a train ride, with different “stops” covering Zesty, Savoury, Tea, Fruity, Herbal, Pop Culture and Dry Classic Martinis. Among the more approachable options are the grapefruit-forward Portofino Martini and the shiso, green apple and lime-infused Karuizawa, while the Tokyo Spice Martini brings tequila and Japanese spices into the mix. For something more theatrical, the Sub-Zero Dirty Martini is prepared tableside and chilled to -10°C, resulting in an unusually silky texture.
At the more adventurous end, the ‘Guanciale’ Sinful Martini adds guanciale oil to a crystal-clear, crisp and dry cocktail, while the sweeter Espresso Martini combines tequila, coffee liqueur, hazelnut, coconut and cold brew, served with charred marshmallows. There is also a selection of olives and modest tapas to accompany the drinks, making this less about strict martini tradition and more about embracing the cocktail in all its playful variations.
