Tokyo-born kaisendon restaurant MUKAI has opened its first outlet outside Japan at Plaza Singapura, bringing its signature seafood bowls from Shibuya to Singapore. Known for its generously piled kaisendon, the restaurant serves premium Japanese seafood over seasoned sushi rice, with options ranging from the Nami ($28.90++) to the limited Goku Goku ($79.90++), of which only 30 servings are available daily. The menu highlights carefully selected sashimi, including premium maguro cuts, uni, ikura and seasonal seafood.
MUKAI’s signature offering is designed as a two-stage dining experience. Diners first enjoy the fresh seafood and rice as a traditional kaisendon, before adding a dashi pour-over made with either katsuobushi or asari broth. The warm broth transforms the remaining rice and toppings into ochazuke, offering a lighter, comforting finish to the meal. The concept draws on generations of Japanese culinary traditions while placing emphasis on seasonality, craftsmanship and the quality of its ingredients.
With its first international location, MUKAI brings its Shibuya-born approach to kaisendon to the heart of Singapore. The restaurant focuses on allowing diners to customise their experience through different seafood selections and dashi options, while maintaining the balance between premium ingredients and traditional preparation. Its guiding philosophy, “One Bowl. Two Experiences.”, captures the progression from fresh seafood and seasoned rice to a warm ochazuke finish.
