This is the spirit behind Casa Lola, the latest casual concept by FOC Group. Known for championing modern Spanish cuisine in Singapore, FOC — which means “fire” in Catalan — began as a passion project between friends in 2014. Inspired by the authentic bodegas central to everyday life in Barcelona, Casa Lola introduces a more relaxed expression of Spanish hospitality in the heart of Boon Tat Street.
BEYOND TAPAS AND TIPPLES
More than a place for tapas, Casa Lola celebrates the culture behind how people in Spain eat, drink and connect.
Co-founded by husband-and-wife duo, Barcelona-born Chef Juanjo Carrillo and Marcela Pino, Casa Lola is rooted in their shared passion and experiences across food and hospitality. The concept also draws from Juanjo’s personal story, Spanish heritage and culinary journey, with some of his earliest memories of food and cooking shaped by summers spent at his grandmother Lola’s family-run venta — a traditional country inn and restaurant — in Jumilla, southeastern Spain. Naturally, Casa Lola takes its name from her.
These memories, together with the lively spirit of Barcelona’s traditional neighbourhood bodegas and Juanjo and Marcela’s shared experiences in hospitality, form an important part of the inspiration and creative identity behind Casa Lola. Over more than 16 years, Juanjo and Marcela’s lives and careers have taken them across Spain, London, Hong Kong, Australia and Kuala Lumpur, shaping a shared appreciation for food, hospitality and memorable guest experiences.
Casa Lola reflects many of these shared experiences and influences, bringing together the rustic warmth of southern Spain with the vibrant energy of a Barcelona bodega. Guests are invited to linger over honest cooking, approachable wines and shared plates in a welcoming space designed to feel like a true neighbourhood gathering place. Casa Lola engages the senses from the moment guests step through its cobalt-blue entrance. Earthy, rustic textures of aged timber, terracotta, exposed brick and intricately painted Spanish tiles are softened by warm, golden lighting, while walls adorned with vintage Spanish artwork evoke the nostalgia of old neighbourhood taverns.
As FOC Group’s latest concept, Casa Lola offers a fresh, casual take on Spanish dining rooted in tradition and the joy of gathering around the table.



SPANISH COMFORT FOOD INSPIRED BY GRANDMA LOLA’S KITCHEN
Casa Lola’s menu takes inspiration from the flavours, memories and traditions associated with Spanish home cooking, including dishes influenced by Juanjo’s childhood summers and family memories.
The menu is brought to life by Casa Lola’s dedicated culinary team, translating these inspirations into a collection of comforting Spanish dishes alongside more contemporary interpretations.
TAPAS
Begin with “Salmorejo” Chilled Tomato Soup ($14), with Ibérico ham, boiled egg and croutons. One of Spain’s most iconic cold soups, it is prepared according to tradition and finished with classic garnishes. Velvety, vibrant and intensely flavoured, the dish celebrates the simplicity of exceptional ingredients and the soul of Spanish home cooking.
Creativity also finds its place on the menu with Crispy Plantain with Avocado Cream & Sriracha Honey ($9 for 2pcs), inspired by the classic Spanish pairing of fried aubergine with honey but reimagined with a Latin influence. Crisp plantain replaces the aubergine, finished with creamy avocado, honey and a touch of sriracha.
A true Spanish tavern classic is Crispy Suckling Pig Ear with Smoked Paprika Aioli ($15), a rare find here in Singapore. Spanish suckling pig ears are patiently confited until tender, then fried for a crisp exterior while remaining succulent inside. Served with smoky paprika aioli, the dish celebrates Spain’s tradition of transforming humble ingredients into unforgettable flavours.
Lola’s Traditional Spanish Snails with Mediterranean Herbs ($22) pays tribute to the rustic flavours and family cooking that inspired Casa Lola. Slowly cooked with aromatic cumin, cloves and Mediterranean herbs, the dish offers a rich and comforting expression of traditional Spanish cuisine.
Taking inspiration from the iconic anchovy pintxos of Spain’s Basque Country, Smoked Cantabrian Anchovy ($16 for 2pcs) is served on toasted brioche with foie gras ganache. The combination brings sea and land together through the classic Spanish mar i muntanya philosophy, balancing savoury, smoky, creamy and subtly sweet flavours.
Another timeless Spanish bar bite is Ibérico Chorizo in Sherry Wine Sauce ($22), served with Spanish butter beans. Premium Ibérico chorizo is sautéed in a lightly spicy sofrito, flambéed with Manzanilla sherry and gently simmered with traditional Spanish Judión de El Barco butter beans.
MAINS & MORE
Huevos Estrellados with Garlic King Prawns ($32) offers Casa Lola’s take on one of Spain’s most beloved comfort dishes. Succulent king prawns are sautéed in extra virgin olive oil with garlic and dried chilli, accompanied by crisp Spanish Agria potatoes and free-range eggs.
Grandma Lola’s Baked Macaroni Ragù ($20) draws inspiration from comforting family meals and childhood memories. Slow-cooked beef ragù is tossed with macaroni, generously topped with melting cheese and baked until golden and bubbling — a nostalgic expression of Spanish home cooking.
Crispy Deboned Suckling Pig ($36) with roasted apple and pumpkin celebrates one of Spain’s iconic delicacies. The suckling pig is slow-cooked overnight until tender, carefully deboned and crisped for a crunchy finish. It is served with a rich reduction of roasted bones and Port wine alongside a sweet and tangy apple and pumpkin chutney.
Fideuà, Toasted Vermicelli Noodles, King Prawns & Squids ($32) showcases another beloved Mediterranean Spanish tradition. Toasted vermicelli noodles are slowly cooked in an intensely flavoured seafood stock with king prawns and fresh squid, absorbing the rich essence of the sea before being served in a traditional paella pan.



SEASONAL PAELLA
At Casa Lola, seasonal paellas showcase carefully selected ingredients while celebrating the diversity of Spanish rice traditions.
At their foundation is Molino Roca “Dinamita” rice, a premium Spanish short-grain rice from Valencia prized for its ability to absorb flavour while retaining its texture and shape. The rice is cooked with Casa Lola’s salmorreta, spices and saffron and finished over high heat to create the coveted socarrat — the crisp, caramelised layer associated with traditional Spanish paella.
Seasonal variations will change according to ingredient availability, allowing Casa Lola’s culinary team to showcase different combinations throughout the year.
DESSERT
A sweet ending comes in the form of Casa Lola’s Chocolate Cake with Layers of Manjari 66% Dark Chocolate Ganache ($18). Made entirely in-house, the indulgent chocolate cake features moist cocoa sponge with a touch of Cointreau, layered with Manjari 66% dark chocolate ganache and finished with a glossy chocolate glaze.
WINE, PORRONES AND THE SPIRIT OF THE SPANISH BODEGA
At Casa Lola, wine is more than a drink; it forms part of the culture and ritual of gathering around the table.
Inspired by traditional Spanish bodegas, Casa Lola serves its house wines from wooden barrels and in Spanish porrones designed for sharing. The house selection features Red and White Garnacha from DO Terra Alta, available in 250ml ($22), 500ml ($42) and 750ml ($62).
Guests can also enjoy house-made sangrías prepared with fresh fruit and presented in handcrafted terracotta jugs, evoking the convivial rituals of Spain’s neighbourhood bodegas. They are available in 500ml ($38) and 700ml ($68).
At Casa Lola, every glass tells a story, inviting guests to experience Spain through its flavours, traditions, hospitality and the simple joy of sharing around the table.
