The goodness of each begins with the chicken itself – a premium local organic free-range spring chicken that’s grazed for an optimal period of 50 to 60 days. Traditionally enjoyed during Korea’s hottest summer days, samgyetang is a nourishing dish made by simmering a whole young chicken stuffed with glutinous rice, ginseng, garlic, and jujubes. Embracing the belief of “iyeol chiyeol” fighting heat with heat, Koreans savour this comforting soup during the Boknal days to restore energy and promote balance, celebrating a centuries-old tradition of health and vitality.
In addition, the fowls develop tender yet pleasantly chewy meat, perfect for creating BOMUL Samgyetang’s authentic Korean ginseng chicken soup – a timeless dish cherished for generations. The natural sweetness is infused into the signature hanbang (traditional Korean medicine) broth, a blend from 18 types of ingredients handpicked to nourish BOMUL’s diners.
These healthful ingredients include dried gardenia fruit, polygonatum odoratum, deer antler, morus alba, mulberry leaf and many more, each valued in traditional Korean medicine for their health-promoting properties. Dried gardenia fruit is believed to help cool the body and support liver health, while polygonatum odoratum provides gentle moisturizing and restorative benefits that help replenish energy. Deer antler is prized for enhancing vitality and stamina, and Morus alba contributes antioxidants and immune support. Mulberry leaf is said to benefit heart health by reducing cholesterol and blood pressure levels; as well as milk vetch root, which supports the immune system, improves energy, and potentially helps with conditions like seasonal allergies and chronic fatigue. While samgyetang is now an iconic Korean soup, as far back as the Joseon Dynasty there were records of similar chicken soups prescribed for frail individuals or the royal family. That’s because Koreans have the age-old practice of boyangsik (보양식) – restorative foods eaten to strengthen the body, especially during summer.
A signature samgyetang is Collagen ($29), which comprises a variety of oriental herbs including whole premium ginseng aged for four to six years used per pot. Had an awesome party last night with drinks but worried about the next morning’s effects? Head to BOMUL Samgyetang for its Spicy Cure ($32), brewed with extra-spicy chilli pepper, herbs, chives, and enoki mushrooms for bold flavours that will wake you up.
With Energy ($36), enjoy the soft yet deep savoury notes of the fragrant 100% Korean perilla, a versatile herb with antioxidant, anti-inflammatory, and anti-bacterial properties. This Restorative ($38) Samgyetang features the precious black tiger palm mushroom, highly valued in traditional Korean and Chinese herbal cooking. It imparts a deep, earthy aroma and subtle sweetness to the broth, while its abundance of antioxidants and polysaccharides is believed to support kidney function, circulation, and immune health. Detox ($32) with the mild and savoury taste of steamed Korean “mung beans”, especially brewed for balance and aid in digestion. Remember your Rejuvenation ($36), which is infused with aged black garlic, carrying layers of caramelised depth.
A contemporary creation is Black Truffle ($38), which is delicately perfumed with the aromatic fungi for a refined and heady aroma. And perfect for pairs is the Anti Ageing ($79 For 2pax), a regal herbal chicken soup brimming with premium ginseng, tender octopus, and fresh abalone.
Diners can also enjoy Samgyejuk, a slow-cooked premium ginseng chicken and glutinous rice porridge. This includes the hard-to-find Maesaengi Abalone ($29), enriched with fresh abalone and nutrient-rich maesaengi seaweed, as well as the smooth and naturally sweet Korean Pumpkin ($25) porridge, rich in vitamins, antioxidants, and dietary fibre. Fill up on the classic Seafood Pancake ($25), or try the Minari Pancake ($22), made with Korean water parsley.
