Teishoku Sets From the Heart
Teishoku refers to a traditional set meal served in Japan, characterised by a main, miso soup, rice and pickles, each serving as an element that strikes the perfect balance of wholesome nutrition and joyful satisfaction.
Top on the list of Ichiban Boshi’s 10 new Teishoku Sets is the comforting Tori Mizutaki ($17.90) a Fukuoka-style hotpot of handmade tsukune or chicken balls in a collagen-rich broth made from Japanese chicken. Gentle, savoury and soothing for every mood, it comes boiling with deepening flavours as you add in vegetables, tofu and mushrooms to simmer in the golden broth. Pair each mouthful with citrusy ponzu for a bright lift that refreshes the palate. A dish that restores your energy and gently resets the day. Truly a chicken soup for the soul!
Treat yourself to richer flavours with the Gindara Saikyo Yaki ($24.90). Black cod is marinated in Kyoto-style white miso for a delicate sweetness that teases the taste buds before melting away in buttery umami. The dish finds balance in the refreshing bite of pink hajikami ginger, a crisp counterpoint that cleanses the palate between indulgent bites.
For beef lovers, this sizzling favourite satisfies from the very first bite. The Oroshi Ponzu Beef ($22.90) brings tender cubes of beef seared on a hotplate, releasing a mouthwatering aroma as they caramelise into rich, savoury perfection. The citrusy ponzu brings brightness, while the grated daikon oroshi softens each mouthful, adding gentle, earthy sweetness that infuses into the rich beef. It’s a lively, sensory experience with the sizzling sounds, wafting aroma and the smoky taste, all coming together in one deeply satisfying moment.
Craving something familiar that has the warmth of Japanese comfort food? Look no further than the healthy yet indulgent Tori Kurozu ($16.90). A Japanese twist on the classic sweet and sour pork, this beloved teishoku dish brings together crispy fried chicken and a vibrant medley of vegetables, tossed in a glossy, fragrant black vinegar sauce. The kurozu adds a piquant tang, to wake the senses, balancing sweetness and savouriness. It’s a dish for those in between moments, wholesome yet indulgent, grounding yet uplifting.
The Pork Katsu ($18.90) is a crowd favourite for good reason, featuring a Kyoto-style pork cutlet double-fried to achieve both juiciness and crispiness, and complemented with mustard for a bold kick. Other ways of enjoying it is to dip it in the tonkatsu sauce topped with grinded sesame seeds for explosive flavour or squeeze on lemon juice for a refreshing touch.
Clean wholesome sweetness is prevalent with the Hamachi Kama Nitsuke ($26.90), featuring a whole yellowtail collar simmered in a classic-style savoury-sweet soy sauce. Burdock root and shiitake mushroom, topped generously with a bundle of shaved shiragane or leek, further lend herbaceousness and depth to a dish that will leave you spooning up the last drop.
Unagi lovers will be delighted by the Unagi Hitsumabushi ($25.90) with two generous fillets of grilled eel glazed in a rich kabayaki sauce, served atop rice with shredded egg omelette and seaweed. A beloved Nagoya specialty, this dish invites you to savour it in three delightful ways: enjoy the unagi on its own to appreciate its full flavour; enhance it with marinated wasabi stems and green onions for added crunch; or complete the experience with warm dashi broth poured over, transforming it into a comforting bowl of ochazuke.
Crunch is abundant and delightful with the Tempura Moriawase ($19.90), a plate of golden Black Tiger Prawns, assorted vegetables and Japanese sweet potato tempura. Tiger prawns make for juicier, springier and sweeter bites, holding ample taste and texture even after a generous soak in the tempura sauce.
Widely enjoyed in Japan is the Tori Shiokoji ($16.90), simple yet flavourful pan-fried chicken marinated in salted rice malt served with moromi barley miso sauce for extra depth. It’s a combination that will leave you wanting extra portions of rice.
Pork is equally satisfying with the Pork Shogayaki ($17.90) sliced pork loin stir-fired with onion and Japanese ginger sauce. A popular Japanese home dish, it is comforting and full of character thanks to the caramelised soy glaze and kick of grated ginger.
