Bar Middle has officially opened along Hongkong Street, marking the debut of bartender Gavin Teverasan’s first bar almost a decade after his time at the acclaimed 28 HongKong Street. The intimate 20-seater concept blends the precision of Japanese bartending with the relaxed hospitality of American cocktail bars, creating a welcoming space where refined drinks are served without the formality. Guests are greeted with thoughtful touches, including a warm towel and a complimentary palate opener, setting the tone for an evening of understated hospitality.
The cocktail menu embraces a less-is-more philosophy, with each drink crafted from a tightly curated list of ingredients. Standouts include the Mango & Hojicha, which balances tropical fruit with the roasted depth of Japanese tea and ginger, the inventive It’s Just Negi, featuring gin, sake-vermouth and pickled Japanese leek, and the refreshing Gimlet Fizz, brightened with calamansi and sudaichi-infused champagne cordial. Those stopping by earlier can also enjoy happy hour, with cocktails priced at S$18 from 5pm to 7pm, Monday to Thursday, and 4pm to 7pm on Fridays and Saturdays.
The space reflects the same thoughtful restraint found behind the bar, with warm wood finishes, burgundy seating and subtle design details inspired by washi paper. A soundtrack of Japanese hip-hop and city pop keeps the atmosphere lively without overpowering conversation, while guests can choose between counter seats for an up-close look at the bartenders in action, intimate nooks for quieter catch-ups, or the lively central banquette that inspired the bar’s name. The result is a polished new cocktail destination that feels equally suited for serious drinks enthusiasts and casual evenings out.
