Ju Xing Home, a Hong Kong MICHELIN Bib Gourmand restaurant, opens its first express outlet, Ju Xing Fish, at The Food Place by Food Republic at Raffles City. This quick-serve stall specialises in Ju Xing Home’s Signature Sauerkraut Fish, priced from an affordable $11.80, with the aim to make this restaurant dish more accessible to all. Prepared using the exact same recipe as the original at Ju Xing Home, it delivers the same hot, spicy, and sour flavours that have won over fans in Hong Kong and Singapore. With Ju Xing Fish, chef-owner Ng Kong Kiu stays true to his philosophy of dishes made with heart, where comforting soul food should be shared with as many people as possible – centred around togetherness and happiness.
In Hong Kong, Ju Xing Home is often frequented by celebrities who include Jay Chou, Alan Tam, Raymond Lam, Bosco Wong, Ruco Chan, Ron Ng and many others. Awarded the Hong Kong MICHELIN Bib Gourmand accolade for 8 years since 2018, this is testament to Ju Xing Home’s undying popularity that speaks for itself. Ju Xing Home opened its first Singapore outpost here two years ago, in Ngee Ann City.
Fresh Flavours Not to be Missed
At Ju Xing Fish, taste the same hot, spicy and sour restaurant-quality goodness of Sauerkraut Fish (酸菜魚). What’s special about the Ju Xing rendition is that the piquant Sichuan-style fish soup with pickled mustard greens, is lighter and less oily for a healthier take. Key to the broth’s depth of flavour is an entire chicken, which is boiled over a large fire, including its bones and feet. Thereafter, the pot is lowered to a simmer to reduce the broth for concentrated flavours, then fresh pickled mustard and fish are added at the end to retain their crunch and tenderness.
Ju Xing Fish’s Signature Sauerkraut Fish is available in options of Sea Bass Fish Fillet ($11.80), and Crunchy Grass Carp Fish Fillet ($13.80), which has a firmer bite. These pristine white fish slices are also available in other soup flavours that include Mala, and Tomato, with a choice to add on White Rice, Bee Hoon or Claypot Noodle for an additional $1.
Specially created for Ju Xing Fish is also the Pao Fan series. Savour these addictive soups with a tangy Tomato Fish Pao Fan or spicy-numbing Mala Fish Pao Fan – the crispy rice in the soup adding a new texture and dimension to the dish, making it even more satisfying. Purists can also go for the original, the Sauerkraut Fish Pao Fan. Diners can also select if they would like Sea Bass Fish Fillet ($12.80) or Crunchy Grass Carp Fish Fillet ($14.80) for their Pao Fan. Said to be better for skin, hair, and nail health, as well as supporting anti-ageing and skin hydration needs, add on Premium Fish Collagen for an additional $2. There’s still more to relish at Ju Xing Fish, with curated sides that include Pickled Sauerkraut ($3.80) to enjoy on its own or to add to your main, Spicy Pickled Radish ($3.80, served cold), Crispy Fish Skin ($3.80) for even more crunch, Salted Egg Fish Skin ($4.80) for added savouriness, and Crispy Mermaid Fish ($4.80), also known as ikan kering.
