Opening this May atop the rooftop of the National Gallery Singapore, Milli is a revolutionary double-storey destination redefining dining and nightlife entertainment. Bringing together a formidable trio of industry heavyweights – LG Han , Vijay Mudaliar and the team behind Bae’s Cocktail Club, led by managing partners Sheen Jet Leong and Dharma Wang – Milli aims to pioneer the next generation of Singaporean hospitality by uniting some of Singapore’s leading names in food, drinks and nightlife under one roof.



A Collaboration of Industry Leaders
Leaders in their respective fields, the culmination of Bae’s, Han, and Mudaliar, form an all-star team delivering a best-in-class Singaporean hospitality experience to the world. Han is known for championing his own style of Singaporean cuisine on a global stage, often featured on culinary programmes on Netflix, while Mudaliar, through Native, is recognised for his technique-driven approach to cocktails, rooted in local and regional produce. Combined with Bae’s global recognition for hosting the world’s top artists and celebrities, Milli sets a new standard for a complete night out — an eclectic platform to celebrate and showcase Singapore culture to the world.

With spanning views of Singapore’s iconic skyline, Milli unfolds as a seamless journey, from lunch, sunset high tea, dinner to late-night cocktails and dance till as late as 4am. “At Milli, you are invited to explore both spaces naturally over the course of a day and night as one continuous experience. You can move from intimate moments with friends at Milli: Sky Dining & Bar to a high-energy social setting at Milli: Lounge. It’s a space designed for every occasion and for everyone.” says Leong.
At Milli: Sky Dining & Bar, the atmosphere is intimate and refined, where Han and Mudaliar present a forward-looking interpretation of Singaporean cuisine and cocktails against a backdrop of the city skyline. It’s a space that invites you to slow down, where the focus is on the table, the company, and the moment.
Below, Milli: Lounge shifts into a high-energy enclave built around the soundtrack that has shaped generations. Building on the DNA of Bae’s, the space offers sounds that Singaporeans have loved to dance and sing along to, till as late as 4am. A multi genre format spanning pop, disco, funk, house, hip hop and R&B, among others, from pre 2000s classics to the anthems of today, reinterpreted and remixed for the present, creating a dynamic atmosphere where novelty dances with nostalgia.
“We are creating an intimate, cosy space that brings people together through the songs we all carry with us. It pulls at something familiar, but what happens in the room feels entirely new. It is that shared energy, that moment where everyone feels it at the same time, that people leave talking about long after the night ends,” says Wang.
A striking 20-metre long high definition screen anchors the space, creating the illusion of a full height window that opens to an immersive view of the Singapore skyline, evolving with the time of day and the rhythm of the music.



The Culinary & Cocktail Programme
Led by Han & Mudaliar, the culinary and cocktails draw deeply from Singapore’s culinary heritage whilst looking beyond the horizon. Familiar flavours are treated with respect and enhanced with high-quality produce, expert execution, and occasionally presented playfully.
Milli provides the canvas for Han to expand his repertoire to a wider audience through larger sharing plates that encourage the culture of communal dining, which is quintessential to Singapore dining. Familiar signatures of Han will also make a return in reimagined forms; his signature Chilli Crab Ice Cream, a dish that once challenged perceptions of a national classic, returns as a starter for the table to share.
The classic Singapore Oyster Omelette is presented Soufflé style made with Japanese eggs and French oysters, offering a lighter nuanced take on the local classic; while the Roasted Spring Chicken Rice Paella reimagines a beloved staple with a mixture of glutinous and koshihikari rice cooked in old mother hen stock, and finished with a scorched bottom reminiscent of a claypot rice. King crab is presented in an interactive format – first enjoyed steamed in its purest sweetest form, before having the option to be dipped into white pepper or salted egg yolk sauces served on the side.
Lunch starts from $38 for a 2 course set with add-on ala carte items available to order. Sunset high tea will soon follow in Q3. Han’s creations of indulgent, shareable bites carry through the wee hours of the night — think prata pizza, goreng pisang skewers, and ice cream pandan waffles — playfully designed for the late night munchies.
“Milli is a new avenue for me to connect with more people through my cooking; I’ll be creating hearty sharing dishes that bring people together over flavours they’re familiar with, but approached with high quality ingredients and execution. It’s less about formality, more about enjoyment. It’ll be food I want to eat myself with friends and loved ones on a daily basis.” Han explains.
Dessert sets the stage for Han and Mudaliar’s creativity to collide in a collaborations series of Ice Kachang-goris, a rework of the local dessert with Japanese technique and precision. Available as alcoholic and non-alcoholic options, they bring together the duo’s culinary and cocktail perspectives in playful, unexpected ways. Seasonal expressions introduce cross-cultural elements, elevating the familiar mix of shaved ice, syrups, and toppings with unexpected pairings, including a bandung-inspired variation with rose liqueur, coconut ice shavings, and crisp meringue, as well as a Solero-inspired version, a throwback to the tropical, zesty, and tangy-sweet vanilla ice cream combination Singaporeans grew up with. As the collaboration evolves, expect seasonal drops of desserts and flavour combinations inspired by what Singaporeans know and love.
Mudaliar presents a cocktail programme shaped by local references and everyday familiarity, designed for intimate and social occasions. The drinks balance recognition with discovery, from locally inflected spritz-style creations to cool off on a warm sunny day, to revived classics refined for the modern palate.
Revisited Singapore classics include the Milli, inspired by the Million Dollar Cocktail by Ngiam Tong Boon – who also created the Singapore Sling. The quintessential Singapore breakfast of kaya toast and kopi (coffee) forms the basis of Milli’s riff on the classic Espresso Martini, aptly named The Singaporean Breakfast, whilst a nostalgic reference to a well-known staple in Singaporean nightlife favourite of whisky with green tea is presented in a clarified whisky base with matcha foam and clarified yuzu. Look out for a familiar fast-food icon that gets reworked into a spice-forward margarita with a distinctly Singaporean edge.
“Time & place is important for a holistic cocktail programme. Certain drinks will stand out on their own to be enjoyed on the rooftop or lounge, but others will work with the food from Han. The Singaporean Breakfast Slushie can cool you down in the heat of the day or kick start your night as the perfect sweet finish to a meal in the evening.” Mudaliar enthuses.

On the entertainment front, the calibre remains uncompromising, with guest DJs, artists and international names continuing the legacy established by Bae’s – which is limited to R&B and hiphop, but through Milli’s is able to expand to artists across all genres. Chef Han will host a rotating lineup of guest chefs – including names he has long wanted to work with beyond the confines of Labyrinth – while Mudaliar continues to invite some of the world’s leading bartenders to shape the cocktail experience. In essence, Milli responds to a shift in how people want to dine and be entertained. No longer just about moments, it’s become a holistic experience across culinary, cocktails, and clubbing with entertainment at its core.
