Sushi Kimura Plus marks the return of Chef Tomoo Kimura after a year-long hiatus, reintroducing his craft in a more intimate format. Replacing the former 22-seater Sushi Kimura, this new concept pares things down to just eight seats, centred around a counter where every piece of sushi is prepared personally by the chef.
What sets the experience apart is its warmth. Instead of the usual hushed, formal atmosphere, Chef Tomoo keeps the room engaging — answering questions, sharing insights on ingredients, and creating a more relaxed, conversational flow. The meal revolves around a sequence of 10 meticulously crafted sushi pieces, each presented on a glass counter with a mirrored underside, allowing diners to appreciate the details from every angle.
The shari (sushi rice) is a highlight, striking a precise balance between structure and softness — holding its form while gently breaking apart on the palate. Standout bites include the sweet cockle clam, rich chutoro, delicate aji, and silky anago. For those planning a visit, the space works best as a full private seating of eight, and if the ankimo (monkfish liver) is available as an add-on, it’s well worth ordering.
