Torasho Ramen Bar, the homegrown ramen concept by Chef Sho Naganuma, reopens its dining space at Takashimaya. Since launching in Singapore over six years ago, Torasho has built a following for its honest, old-school approach inspired by everyday ramen culture across Japan. With the reopening comes a renewed focus on classic Tokyo-style shoyu ramen, reflecting the philosophy of traditional ramen shops that perfect a single style of broth and bringing the spirit of a neighbourhood ramen shop in Japan to the heart of Singapore.
Shoyu Ramen defines the menu, built around a clear soy-sauce-based broth that reflects the lighter yet deeply savoury style associated with Tokyo ramen traditions. Rather than relying on pork bones, the broth draws its depth from simmered chashu pork, creating a cleaner yet richly savoury base that highlights the natural character of its ingredients.
Guests can enjoy the ramen in several classic variations. The signature Ramen ($16) highlights the shoyu broth in its purest form, while Chashumen ($19) adds generous slices of slow-prepared pork for a heartier bowl. Other options include Ramen with Tamago ($18) and Chashumen with Tamago ($21), crowned with a silky marinated egg and its molten centre, as well as Wontonmen ($19) and Chashu Wontonmen ($22), which introduce wontons into the bowl. Each variation builds on the same shoyu foundation, allowing guests to enjoy different toppings and textures while preserving the character of the broth.
Torasho also offers Tsukemen, a style of ramen where noodles are served separately from the broth and dipped before eating. This format allows guests to experience the noodles and broth differently, highlighting their texture and flavour in each bite. Similar to the ramen selections, guests can enjoy options such as Tsukemen ($18), Tsukemen with Tamago ($20), Chashu Tsukemen ($21), and Wonton Tsukemen ($21).
Complementing the broth are Torasho’s proprietary noodles, produced by Japanese noodle makers from Sapporo and Tokyo using a recipe developed exclusively for the brand. In keeping with its commitment to authenticity, chashu is prepared fresh in-house, bringing an old-school touch that emphasises craft and simplicity.
Beyond ramen, the menu also features a range of sides and set meals designed to round out the dining experience. Guests can opt for sets such as Rice Set (+$3.80), Chashu Rice Set (+$5.80), or Small Curry Rice Set (+$4.80), each served with green tea. Additional sides include wonton, crispy karaage, and tender chashu.
For those who prefer to customise their bowl, additional toppings such as tamago, chashu, nori (dried seaweed), menma (fermented bamboo shoots), and moyashi (bean sprouts) are available. Guests may also season their ramen to taste with complimentary condiments including garlic, ramen pepper, and chilli garlic, allowing each bowl to be enjoyed exactly the way they like.
