Le Bon Funk has been in the spotlight for six years and continues to march to its own rhythm. With locations in Club Street and Holland Village, the third addition to its family, New Bahru, marks a new chapter for Chef-Owner Keirin Buck. This time, Buck is venturing into the cocktail scene with Bar Bon Funk, where head bartender Josiah Chee (previously of Jigger & Pony and 28 Hong Kong Street) leading the charge. Staying true to Buck’s produce-driven philosophy, the bar focuses on repurposing ingredients to extract maximum flavor, even from what would typically be discarded.
Bar Bon Funk’s menu is ever-changing, offering a fresh experience with every visit. It features eight classic cocktails and eight signature creations inspired by nostalgic Saturday morning flavors. Think cereal-soaked milk blended with Calvados and Le Gin Pira, or loco-fermented strawberry honey garnished with ‘pudding fruit loops’ for a playful yet refined twist.
With techniques like fermentation, distillation, fat-washing, and clarification, Bar Bon Funk delivers unique, flavor-packed drinks. One standout is the Negroni, made with West Winds Cutlass Gin, Bon Funk Amaro, and Bon Funk Vermouth, both of which are ultrasonic-aged with charred American oak for a richer, smoother taste.
