With over 15 years of experience, the chef leads a kitchen that blends tradition with precision. The menu centres around globally sourced, top-tier pork cuts such as marbled Hungarian Mangalica and US Kurobuta. Signature dishes like the Mille-Feuille Black Truffle Katsu and the indulgent 3-in-1 Shin Katsu Combo (featuring prawn, rosu, and hire) showcase the restaurant’s dedication to both innovation and authenticity.
Each set is served with charcoal-grilled rice, miso soup, pickles, and finely shredded cabbage—elevating the classic tonkatsu experience with thoughtful accompaniments. The technique-driven approach includes a bespoke panko breading for optimal crunch, precise aging and slicing of meat, and a signature frying method that locks in moisture while keeping the crust feather-light.
