At the helm of the kitchen is Chef Shyong, a yakitori specialist with over a decade of experience mastering the art of yakitori. After four years leading the grill at Shirokane Tori-Tama, where he honed his craft with the flame and fire of the yakitori coals, he sets out to create something he can call his own.
Perfecting the omakase experience is veteran chef-proprietor Desmond Fong, the visionary behind Sushi Yujo and SHINRAI. With 20 years of expertise in Japanese fine dining Chef Fong is known for his innovative take on omakase, constantly pushing boundaries to deliver new and exciting experiences. Together, Chef Shyong and Chef Fong combine their passion and expertise to Sapōto, shaping a menu that celebrates the best of yakitori and omakase traditions, crafting a yakitori omakase experience that is both authentic and elevated.

Lunch comes as two menus, Ai ($48) and SHINRAI ($98), both inclusive of an appetizer and dessert. The Ai menu presents a delightful ten-course experience, featuring a variety of yakitori, including succulent chicken thighs, 2 kinds of chef’s choice grilled chicken, innard, seasonal vegetable, mid wings, and a comforting bowl of their signature ramen. The SHINRAI menu takes it a step further, introducing additional delicacies such as chutoro carpaccio, tsukune with a rich egg yolk, luxurious truffle chawanmushi, and tender pork jowl, elevating the meal to new heights.
Dinner presents three exquisite menus: SHINRAI ($98), Sapōto ($148), or Yujo ($198), each inclusive of an appetizer and dessert.
