Sabòr, a bold new Spanish restaurant celebrating classic tapas and Spanish tradition, opens at CHIJMES on 1 April 2026. The 100-seater concept introduces a vibrant courtyard dining experience inspired by Spain’s tapas culture, bringing bold, rustic flavours into the heart of Singapore’s CBD.
Backed by the team behind Duomo Ristorante, Sabòr marks their expansion into Spanish cuisine, with a focus on convivial, communal-style dining anchored in heritage flavours and a lively atmosphere. The restaurant occupies a glass-enclosed dining room alongside an open courtyard terrace within CHIJMES’ historic grounds, offering a setting designed to transition from relaxed evenings into energetic dinners.
The menu centres on soulful tapas and robust mains for sharing. Highlights include Croquetas Spicy Crab, Bikini Sobrasada with Honey and Cheese, Angus Beef Steak with Piquillo Peppers, and Grilled Barramundi with Moho Picón finished over binchotan. Paellas range from classic interpretations to heartier variations such as Grilled Wagyu Beef.



The culinary direction is led by Valencian-born Chef-Consultant and co-founder of the London Paella School, Javier Vicente Rejas, whose experience across Singapore’s Spanish dining scene, including FOC, guides the restaurant’s approach to authenticity and technique. His focus remains on traditional execution with bold, expressive flavours.
Beyond the food and drinks, Sabòr integrates curated music programming into its dining experience, creating a lively social atmosphere reflective of Spain’s communal dining culture. There will be a dedicated happy hour programme from 4.30 – 6.30 pm all week long.
“Sabòr is about bringing people together over flavour and shared plates in one of Singapore’s most recognisable heritage spaces,” says Co-Founder Simone Fraternali, who also owns Solo Ristorante. “We want guests to experience tapas the way it was intended: shared, unhurried, energetic and full of flavour.”
Sabòr adds a compelling new chapter to Singapore’s Spanish dining landscape, where heritage architecture, bold flavours, and the communal spirit of gathering over a shared meal come together.
