How do you tell a pizza is good? The world champion of contemporary pizza, Vincenzo Capuano, tells you to pick up a pair of golden scissors and cut it to test the dough’s structure!
After 30 stores globally and over a million followers on TikTok and Instagram, Chef Vincenzo’s namesake pizzeria is making its way to Singapore, opening its doors at the vibrant and bustling Robertson Quay. This marks the chain’s first foray into Singapore and Asia, bringing an exciting addition to a region that already loves its pizzas.
Just like his outlets in Italy, the Netherlands, Germany, Kosovo, and Dubai, contemporary Neapolitan pizza is the star of the show—crafted using the same time-honoured recipe and technique that secured the chain the 12th spot on the 50 Top World Artisan Pizza Chains 2024!
Pizza World Champion Vincenzo Capuano
Born and raised in Naples, Italy, Chef Vincenzo is a distinguished third-generation master pizzaiolo renowned for his expertise in contemporary Neapolitan pizza. With a career spanning over two decades, Capuano has expanded his culinary footprint globally, establishing numerous pizzerias and amassing a significant following on his social platforms.
Chef Vincenzo draws from the know-how of three generations of pizza-makers in his family. His passion for pizza-making was ignited at the age of 15 under the mentorship of his grandfather, Vincenzo, and father, Luigi, both esteemed pizza chefs.
Immersed in the rich traditions of Neapolitan pizza, he honed his skills in dough leavening and mixing, achieving a harmonious blend of creativity and tradition. His dedication led him to participate in Expo 2015 in Milan, where he prepared over 180,000 pizzas for an international audience.
Throughout his career, Capuano has garnered over 40 accolades, including Best Master Pizza Maker of the Year in the S.T.G. division of the Caputo Cup and, most notably, the title of World Champion of ‘Contemporary Pizza’ in 2022. Recently, his namesake pizza chain was ranked 12 out of 50 Top World Artisan Pizza Chains in 2024 and continues to garner long queues in locations around the world!
In The Name Of Scissors We Trust
Chef Vincenzo’s secret to his pizzas lies in a recipe of long-leavened and highly hydrated dough made out of “Nuvola Super” flour, which he developed alongside a flour manufacturer, that bites into super-duper light pizza.
To test the integrity of his traditional Neapolitan pizza, diners are invited to pick up the pair of golden scissors placed at every table in his restaurants and cut through the pizza’s soft dough that comes with a pronounced crust.
Toppings range from classic to creative combinations, each emphasizing the use of Italian premium extra virgin olive oil and San Marzano tomatoes that are hand-kneaded to produce a chunky sauce.
The Menu at Vincenzo Capuano Singapore
In Singapore, Chef Vincenzo seeks to bake up the same goodness of taste, trust, and tradition as in his pizzerias all over the world.
Diners can look forward to his signatures, such as Abbraccio e Mamma featuring a pizza with ricotta-stuffed crust topped with Vincenzo’s Nonno Enzo’s classic meatballs, melted Padano cheese, and buffalo mozzarella. Tetti Illuminati features a base of mountain fior di latte topped fresh out of the oven with Mortadella Bologna IGP slices, crushed pistachios, and shavings of Pecorino Romano for a perfect balance of delicate flavors and textures.
Vincenzo’s Napolitudine is a Neapolitan-inspired creation that starts with hand-crushed tomatoes and smoked mountain provola cheese. After baking, the pizza is topped with Nonno Enzo’s signature meatballs, mountain ricotta, black pepper, olive oil, and fresh basil for an authentic taste of tradition. A standout on the menu is Come Una Capricciosa. Like its namesake, this pizza is playful with various toppings such as cooked ham, champignon mushrooms, and artichoke hearts, creating a combination that blends personal approach and tradition.
