Delicious elegance has a new address: come end-November 2023, Pâtisserie CLÉ’s flagship store will move into a charming shophouse in River Valley at 415 River Valley Road. The prime city location gives fans of the homegrown brand convenient access to their offerings of finely executed French pastries and entremets, available for takeaway and delivery only. For those craving an augmented experience, a full-fledged Pâtisserie CLÉ café set in the idyllic residential enclave of Dairy Farm is also slated to open mid-December.
Founded as an online pastry shop in 2018, Pâtisserie CLÉ was created by local pastry chefs Germaine Li and Joy Chiam who met as roommates while studying pastry at internationally-renowned culinary arts school, Ferrandi Paris. Finding solace in familiarity, the two Singaporeans away in a foreign land bonded over their shared background and passions. They even collaborated to create sweets for an event by invitation of the Singapore Embassy, giving birth to inspired items such as the Orh Blanc tart – a yam-infused variation of the classic Mont Blanc dessert, which stands as a signature item for Pâtisserie CLÉ till today. Sharing a passion for French pastry- making, where fresh produce and flavours are employed to bring comfort and delight in equal measure; and a palate informed by their Singaporean roots, theirs was a natural, comfortable partnership.
Returning to Singapore, both continued their pastry careers in renowned restaurants. Germaine spent time at the now three-Michelin-star restaurant Les Amis, while Joy worked at the three-Michelin-star Joël Robuchon Restaurant. After the closure of Joël Robuchon Restaurant, the duo came together once again in partnership to launch Pâtisserie CLÉ in September 2018, with the business as a means for them to express their unique approach of creating approachable, comforting flavours through elegant execution.
“Clé” being French for ‘key’, the chefs wanted their French pastries to be the key to the hearts of their customers. Their sincerity came through in their offerings, and business grew rapidly. By 2020, they opened their very first brick–and–mortar space at Paya Lebar Office, and welcomed the second takeout outlet at Lucky Heights in the following year. Moving out of the cosy east-side units to the bigger venues in River Valley and Dairy Farm marks a new phase for Pâtisserie CLÉ, and unlocks new potentials for an expanded menu and new experiences for patrons.
At Pâtisserie CLÉ, the essence of comfort and warmth of home finds its way into every charming creation. With the new River Valley and Dairy Farm outlets, Germaine and Joy are expanding their repertoire beyond classic entremets, tarts, and delightful bakes, refined through French techniques.
