New Soups of Sweet Simmering Goodness
Any hotpot lover would know that broths make or break a session. That is why the restaurant has taken special care to ensure its nine broths are concocted with high-quality ingredients.
The new outlet at Westgate brings a new Century Egg with Coriander Soup Base, a classic Hong Kong twist on traditional flavours that combines the smooth, umami depth of century egg with the bright, herbaceous notes of fresh coriander. The bold, savoury taste of century egg adds a silky texture to the broth, while coriander cuts through with a refreshing lift, making it a uniquely comforting and flavourful choice, reminiscent of Hong Kong’s culinary finesse.
Adding to the repertoire is also a Satay Soup Base, an ode to Southeast Asia’s love for explosive spices. Packed with rich, nutty peanut flavours and a touch of sweetness, this satay broth reflects both the bustling streets of Hong Kong as well as the sizzling markets of Southeast Asia, where various cultures blend harmoniously. The spiced aroma and silky texture make it a warm and deeply satisfying option, offering a perfect balance of savouriness and subtle heat.
Also new is the Clear Chicken Soup Base, a classic Hong Kong-style broth is renowned for its simplicity and purity. Slowly simmered with lean Kampong chicken, the Clear Chicken Soup Base delivers a light yet deeply flavourful broth that embodies the essence of Hong Kong’s traditional comfort food. Perfect as a base for a variety of fresh ingredients, this broth is both warming, nourishing and revitalizing.
The new variations add to classics that diners new and old have come to love. Brewed for hours to extract the essence, the Authentic Pork Bone Soup Base is creamy, savoury and full of collagen. There is of course the requisite mala version that gourmands can expect – Spicy Szechuan Soup Base – made with exotic spices imported from the province. Other palatable options include Teochew Style Soup Base, Tom Yum Soup Base, and Cordycep Flower with Mushroom Soup Base.
