Bold Broths & Spicy Delights
At Shuai Jiang Jun, choose your contender from six different soup broths. Spicy, rich and umami packed, the General’s Inferno Spicy Beef Tallow Pot ($7) uses a secret 40 year old recipe that is passed down through generations. Non-beef eaters are not left out in General’s Clear Oil Pot ($6), where the numbing sensation that Chongqing is known for takes the main stage. For a lighter alternative, go for the General’s Fish Maw & Chicken Pot ($11), a secret recipe that uses over 25 different spices. The result is a nourishing broth that is rich in collagen, protein and boosts energy levels. Simmered for over 6 hours for a rich and flavourful broth, don’t miss the Classic Pork Tripe & Chicken Broth ($6.50) that uses pork trotters, chicken feet, old hen, and old duck.
What’s a hotpot without meat? Signatures at Shuai Jiang Jun include the General Axe Cut Beef ($30), plated beautifully as a shield, as well as the Signature Snowflake Wagyu Beef ($40) that is tender and melt in your mouth. The Double Pepper Beef ($18) comes embellished with red & green chilli for a combination spicy kick that is not for the faint hearted.
Not for the faint hearted, the Tender Chicken Gizzard ($12), Sichuan Style Spicy Ribs ($16) and Sichuan Style Spicy Beef ($16) is generously coated with Shuai Jiang Jun’s signature rub of spices. Made up of a secret medley of chilli powder, peppercorn and more, each mouthful is bold, spicy, aromatic yet addictive.
Seafood dishes at Shuai Jiang Jun are a feast not only for the stomach but also for the eyes. Feast on the Golden Defender Pomfret ($33), a tender, white-fleshed fish that perfectly absorbs the broth’s depth while maintaining its soft, flaky bite, or the Seafood Masterpiece (Tiger Grouper, $100) that is thickly sliced and remains firm yet succulent after being cooked. Don’t miss the General’s Shrimp Paste ($24) that is hand chopped and carries a bouncy texture.
