IPPUDO at Mandarin Gallery is now going beyond its classic yet delicious bowls of authentic Hakata-style ramen. At Mandarin Gallery where IPPUDO’s journey in Asia first began in 2009, they now present IPPUDO Beyond, a brand new dining concept designed to elevate your IPPUDO experience.
Officially launching on 30 August 2025, the brand new IPPUDO Beyond concept will be housed within the current restaurant at Mandarin Gallery. Created to bring people together, IPPUDO Beyond features exclusive ramen creations alongside a specially curated menu of sharing plates, appetisers and mains available only at this flagship location.
As pioneers of the modern ramen dining experience, IPPUDO has redefined tradition while staying true to the quality that they are known for. Every bowl of IPPUDO ramen is served with a smile and arigatou. At this modern and refined IPPUDO Beyond concept, diners can enjoy the quality they know and the flavours they love, with surprises that take them beyond.



Flavours That Go Beyond
Creamy and rich pork bone soup and thin-cut noodles are the defining characteristics of a bowl of Hakata-style ramen. From this base, IPPUDO Beyond adds modern touches and layers of textures and flavours to redefine your ramen experience.
For savoury and earthy notes, have the Daichi Miso ramen (from $20), which adds a flavourful blend of four types of miso, each with a distinct characteristic to create a unique taste profile to the classic milky-white tonkotsu broth. This is paired with thick-cut noodles instead to amp up the texture, and topped with stir-fried vegetables, minced ginger pork, crispy gobo chips and slices of tender roast beef chashu. The finishing touch: a dash of the citrusy sansho spice for a bold, aromatic kick.
Turn up the heat with the new Volcano Miso ramen (from $21), with a base similar to that of the Daichi Miso – miso tonkotsu broth with thick-cut noodles topped with stir-fried vegetables and roast beef chashu. What makes all the difference are the heady notes from the minced garlic pork and Cajun-spiced fried gobo chips. A swirl of chilli garlic oil at the end adds a punchy, smoky heat.
Umami-seekers must order the Uma-Rich Shoyu ramen (from $21), that extracts the briny goodness from clams, the comforting essence of chicken, and the richness of pork for a deeply layered umami-rich broth made from pork, chicken and clams. The broth is then blended with five types of Japanese soy sauce including IPPUDO’s secret shoyu stock. This is served with silky smooth noodles that enhance the broth’s velvety goodness, and topped with tender bamboo shoot tips, mitsuba leaves, and four kinds of premium chashu that include choice cuts of pork shoulder, duck breast, roast beef, and pork loin.
A menu of meticulously crafted sharing plates, apetisers and mains are also available at IPPUDO Beyond. These are perfect as additions to your bowl of artisanal ramen, otsumami to go with your drinks, or convivial dishes that enliven any gathering.
Get your fibre fix with the Red Vegetable Dip ($14), a platter of red lettuce, pickled tomatoes, beetroot, red peppers, red radish and strawberries all artfully arranged as an edible masterpiece. Both visually and texturally enjoyable, these crimson vegetables are served with three unique dipping sauces: soy milk mayo topped with a blend of olive oil and paprika powder, cranberry cheese, and harissa miso. Diners can partake in their own flavour journey with this interactive masterpiece – savouring each bite with the sauce of their choosing, or dipping them into all three for a bold and surprising burst of flavour.
Excellent with beer, sake or anything in between, the Sous Vide Pork Ham ($14) is a creamy and savoury snack. The slices of low-temperature cured pork on this cold appetiser are plated with sweet and spicy sushi ginger, rousing horseradish, and lashings of mellow soy milk mayo, for a multitude of flavours on a plate.
IPPUDO Beyond also caters to diners looking for a protein-packed main that isn’t ramen. A hearty pick is the popular Jamaican style Grilled Jerk Chicken ($15). IPPUDO Beyond’s rendition sees the poultry sprinkled with a bold original spice blend and grilled in pure olive oil for a smoky, aromatic finish. This is served with a tangy sweet spicy ketchup that delivers just the right amount of heat, and paired with crisp gherkin pickles for their crunch and acidic notes that perfectly balance the robustness of the chicken.
