Singapore is home to plenty of Thai restaurants, but if you want elevated Thai fare, pay a visit to HUE. The Jalan Besar restaurant has plenty of levelled up Thai dishes, including their signature Mama Mia, which nods to the famed Bangkok institution, Jeh O Chula’s tom yum mama noodles.
Inspired by a royal Thai recipe book that they have and their chef’s modern cooking technique, they create a new palette of Thai dishes that is savoury and artful, yet retaining the cultural story of Thai food. The visual and spatial identity for HUE was designed upon the act of these modern implementation of Thai food and the hallmarks of what a Thai culture should be warm and diverse.
