Renowned Chef Sharon Tay, celebrated as Singapore’s gelato trailblazer and the founder behind Momolato, is set to unveil an exciting new venture called High Bar Society.

The moniker “High Bar” isn’t just symbolic; it sets an exceptional standard for alcoholic gelato. Unlike the prevalent industry norm of 1-3% alcohol by volume content, Sharon’s painstaking year of research and development has resulted in an exceptional product boasting 6% alcohol by volume gelato. She incorporates premium spirits like The Macallan, Glenmorangie, Tanqueray, Bombay Sapphire, Jiang Xiao Bai, Patron, Veuve Clicquot and many more exquisite spirits into her artisanal ice cream creations. The outcome is a tantalizing medley of flavors that awakens the palate and delivers a delightful kick.

“The techniques we use in our gelato at High Bar Society have been in development for more than a year,” says Chef Tay. “The result of that dedication has brought the full flavors of premium spirits into the pleasure of eating quality ice creams and gelato.”

Among the exquisite offerings are standouts like Triple Chocolate Macallan, Nama Chocolate Laproiaig Quarter Cask, Tanqueray 10 Key Lime Pie and Ginger Flower, Blue Pea Hokkaido Milk Strawberry Patron XO, Lychee Rose Veuve Clicquot Rose, Sicilian Pistachio Glenmorangie Lasanta and many more. A diverse assortment of over 20 flavors has been meticulously crafted, with an initial unveiling of 15 during the launch, and the remainder slated for gradual introduction over the ensuing months.

Taking centrestage within High Bar Society’s 30-seater interior is a magnificent concrete moon, casting a soft lunar glow that illuminates the room. The moon’s intricate details are a testament to craftsmanship, its texture and craters seemingly brought to life. Subtle jazz notes waft through the air, mingling with the aroma of butterscotch, completing the experience of a space that effortlessly fuses modern elegance with minimalist charm.
