Recently opened along North Bridge Road, Gyukatsu may be well-loved in Japan and familiar locally through concepts such as Gyukatsu Kyoto Katsugyu, but Gyusei distinguishes itself with a clear focus on premium Wagyu, meticulous preparation and an inclusive, Halal-certified kitchen.
At the heart of the experience is Gyusei’s distinctive four-step cooking process, which includes a warm sous-vide “onsen” bath and an aromatic charcoal “sauna” to gently cook and enhance the beef before it reaches the table. Each lightly breaded Wagyu cutlet is served with a personal hot stone grill, allowing diners to finish the meat to their preferred doneness. The gyukatsu sets are accompanied by an array of thoughtfully curated condiments, from freshly grated wasabi to housemade sauces, alongside comforting sides that round out the meal.
For those who prefer alternatives to beef, the menu also features seafood, vegetable and mushroom-based options prepared with the same attention to detail.
