Golden Chopsticks 金筷子, Singapore’s first-ever Yun-Gui-Chuan (云贵川) concept, has opened its doors at Century Square in Tampines. This homegrown brand draws inspiration from the gastronomy and food culture of three Chinese provinces, Yunnan, Guizhou and Sichuan, while also catering to local Singaporean tastes.
Guests can now savour the finest flavours of Yunnan, Guizhou and Sichuan at Golden Chopsticks. Yunnan charms with its spicy flavours and a focus on fresh, seasonal ingredients sourced from its abundant landscape, including mushrooms, herbs, flowers and tropical fruit. The lesser-known Guizhou features a distinctive sour and spicy yet balanced flavour profile, achieved through fermented ingredients such as pickled vegetables, the generous use of chilli peppers, and aromatic tangy elements. Finally, Sichuan is famed for its fiery, numbing, bold and pungent notes, with iconic mala and hotpot dishes.
Golden Chopsticks brings together the best of Yun-Gui-Chuan in an array of signature plates, tantalising sides, comforting soups, fiery stir-fries, noodle dishes and more, all enjoyed in a cosy, welcoming setting. Authentic and premium ingredients are imported directly from these provinces, including Yunnan spices and wild mushrooms, Guizhou speciality produce and chilli paste, as well as Sichuan peppercorns and suan cai (pickled mustard greens). The golden tableware, including the eponymous golden chopsticks, serves as auspicious Chinese symbols of wealth, prosperity and success.
STAND-OUT SPECIALITIES
Already a bestseller is Golden Chopsticks’ Boiled Fish with Pepper Salt 椒盐水煮鱼 (Member Price: $24.80; Usual Price: $30.80). This is a new interpretation of Sichuan’s popular Shui Zhu Yu (水煮鱼), where fresh, springy fish slices are quickly poached in water before being topped with aromatic spices. Here, the restaurant presents a dry version, where supple slices are arranged with edible flower petals over bundles of konjac noodles, seasoned with powdered Sichuan spices and its famous peppercorns. To best enjoy this dish, resist the urge to mix it. Eat it layer by layer, starting from the top, to appreciate the full depth of flavour. By the time you reach the noodles, they will have absorbed all the savoury richness from the fish.
Another popular dish is the Passion Fruit Sour Soup Fish 百香果酸汤鱼 (Member Price: $24.80; Usual Price: $30.80). While spicy and sour soup is a hallmark of Guizhou cuisine, the addition of tropical passion fruit, which is also cultivated in many parts of China including Guizhou, introduces a distinctive fruity tang. The soup also features pineapple, tofu, Guizhou’s crunchy premium white fungus and tomatoes, offering a refreshing alternative to the usual oily, citrusy, pepper-laced versions. Fish is used instead of beef to better suit Singaporean preferences. Although the broth is mildly spicy, diners may request an extra boost of heat with more chilli paste. This paste is a precious jar of tree tomato sauce imported from Guizhou, a fermented sour and spicy condiment traditionally made with wild mountain tomatoes, chillies, garlic and ginger.
Children and adults alike will reach for second and third helpings of the Braised Chicken with Mashed Potato 土豆泥焖鸡 (Member Price: $16.80; Usual Price: $19.80), one of Golden Chopsticks’ signatures. This comforting homestyle dish features chicken braised in a thick, savoury sauce made from a concoction of Yunnan spices, atop a bed of tender potato cubes that can be easily mashed, the perfect accompaniment with the restaurant’s fragrant Wuchang Rice ($1 per serving). Guests may opt for a mildly spicy or non-spicy version.

Get hands-on with the Crispy Rice with Rose Pickled Mustard and Pork 锅巴玫瑰榨菜炒肉 (Member Price: $15.80; Usual Price: $18.80). This dish invites diners to scoop the fragrant diced filling onto each crispy rice sheet, a Guizhou tradition known as guo ba (锅巴), named after the addictive layer of scorched rice that clings to the bottom of the wok. Golden Chopsticks first simmers the pork ribs in a pepper and garlic broth, similar to Singapore-style bak kut teh, for one and a half hours until the meat nearly falls off the bone. The ribs are then fried until crisp on the outside while remaining tender within. In Yunnan, the ribs typically go straight into the fryer, which gives them a firmer bite that the locals prefer. Hidden beneath a generous heap of fried garlic are golden potato pieces, and the dish is finished with lightly fried mint leaves that lend a cool, sweet freshness.

This mildly spicy dish features premium Angus beef slices that are stir-fried with Sichuan pickled mustard greens over high heat for no longer than 18 seconds.
