FËI ZAP MÂI LÄAN 肥汁米蘭, famous for its queue-worthy bowls and authentic Hong Kong rice noodles, will open its 85th outlet and first overseas outpost here in Singapore, at VivoCity (#01-167/168) on 19 December 2025.
The brand hails from China, drawing annual lines that would stretch over 1,000km long – its nostalgic and comforting flavour gleaned from heritage recipes over 60 years old that Fei Zap’s founder personally travelled to Hong Kong to learn. This is what keeps customers coming back for more.

For those who prefer a fuss-free option, FËI ZAP MÂI LÄAN offers Signature Bowls featuring preset ingredient combinations that pair perfectly with each soup base. These bowls highlight the brand’s most popular toppings and let diners enjoy a complete, flavour-balanced meal with ease.
The Mighty Four Bowl (S$13.90)
This is a saucy, layered, and unforgettable combination of fish roe balls, ham, wuxiang, and Fei Zap’s specially made char siew, served with bean sprouts, coriander, and silky rice noodles. The broth is slightly thicker and richer than a regular soup, with savoury bits of minced meat and a gentle smoky aroma from the stir-fried zhajiang. Its slow-simmered bone base adds a smooth, collagen-rich depth that coats the noodles beautifully.
The Pickled Punch Beef Bowl (S$15.90)
Zingy, spicy, and addictive. This bowl brings together tender sliced beef, beef tendon balls, tau pok, and black fungus, complemented with bean sprouts, coriander, and rice noodles. It’s a combination designed to pair perfectly with the bright, tangy Pickled Punch Soup Base.
The Tomato Chop Bowl (S$16.90)
Perk up your day with this bright, tangy, and hearty delight. Featuring a sunny side up egg, specially marinated Hong Kong-style fried pork chop, vegetables, and diced tomatoes, served with macaroni for a comforting cha chaan teng-inspired classic.
The Supreme Twin Fish Bowl (S$16.90)
Fish soup has never felt so rich, fresh, and slurp-worthy. A nourishing mix of fried fish and sliced fish, paired with black fungus, crabstick, radish, and bean sprouts with coriander, are served atop rice noodles. This is indeed a wholesome favourite for fish lovers.



Quartet of Soup Bases
Each bowl of FËI ZAP MÂI LÄAN noodles is cooked à la minute to order. Served piping-hot to the table, it comprises rich soup, simmered Cantonese style for over 12 hours till milky and packed with nutritious collagen; versatile and complex flavours augmented by various toppings for that authentic taste.
A must-try is the Signature Zhajiang Broth, crafted from premium ingredients selected from over 400 items, combined with a secret recipe that has been passed down for 60 years. What’s unique is that it comprises both a “fried sauce” (zhajiang) that’s usually drier, with a comforting bone broth. For the zhajiang, minced meat, pickled mustard greens and chilli are stir-fried over high heat till they meld into a bold and aromatic chunky meat sauce. For the soulful broth, pork bones, chicken bones, collagen-rich pork knuckles, pig’s trotters, pig skin and chicken feet are simmered to form the perfect golden ratio of “two bones, four collagen”. Finally, the broth and the zhajiang are mixed in a 3:1 ratio and simmered again, to produce FËI ZAP MÂI LÄAN’s signature “golden-red” soup that’s bursting with spicy, tangy and savoury notes.
Imbued with a deep umami is the Pickled Punch Peppercorn Broth, a timeless classic brought back by FËI ZAP MÂI LÄAN. As its name suggests, it begins with traditionally jar-cured pickled mustard greens. These are first stir-fried over high heat to release their unique aroma, then combined with the signature bone broth, as well as Yunnan dried chillies and Sichuan fresh peppercorns for kick and fragrance. The broth, addictive with a distinctive nostalgic flavour, is slightly spicy, tangy and superbly appetising – you’ll easily find yourself wanting more!
A crowd favourite is the Tomato Stew Broth, naturally thick and flavourful, bursting with tangy, sweet and juicy notes, with visible chunks of fresh tomato. This is made using fresh tomatoes blended with FËI ZAP MÂI LÄAN’s signature bone broth – a great complement for all types of noodles and suitable for diners of all ages thanks to its bright and comforting taste…yes, even picky eaters and young children included.
Something lighter but also very nutritious is the Rich Fresh Fish Broth. Prepared fresh daily with selected fish using Cantonese soup-making techniques, the result is a milky-white, full-bodied yet non-greasy brew. This is also infused with the natural sweetness of the fish, leaving a lingering, savoury aroma, and is also known as “liquid collagen” for its nourishing and restorative characteristics.

For diners who prefer full flexibility, FËI ZAP MÂI LÄAN offers a Make-Your-Own Bowl format consisting of three easy steps.
Begin by choosing at least three toppings from over 30 options (from S$0.99 to S$2.99), then select your preferred staple, Rice Noodles, Kway Teow, Udon or Macaroni (S$0.90 each). Finally, complete your bowl with one of four soup bases (S$5.90 each).
This format allows every diner to customise their ideal combination of flavours, textures and ingredients to their own liking and taste.

To complement the noodle bowls, Fei Zap offers a variety of easy-to-enjoy snacks ideal for sharing or enjoying on their own.
