Estiatorio Milos, an acclaimed international Greek restaurant chain, is set to open its first Asian location at Marina Bay Sands in Singapore this summer. The restaurant, founded by Costas Spiliadis in Montreal in 1979, has since expanded to nine locations worldwide, including Athens, New York, London, and Dubai. Known for its authentic Greek cuisine and warm hospitality, Estiatorio Milos brings the traditional Greek concept of philoxenia, or making a stranger feel at home, to its elegant 155-seater space, thoughtfully designed with elements of Greek architecture.
At Estiatorio Milos, the connection between Greek gastronomy and nature is celebrated through its focus on fresh seafood and seasonal ingredients. Guests can look forward to the signature ‘fish market’, where an impressive selection of fresh seafood flown in from the Mediterranean is displayed on ice. Diners are invited to personally select their fish, which is then prepared with culinary tradition in mind. The restaurant also showcases unique practices, such as stacking the finest tomatoes into pyramids and using only full-fat yoghurt and Greek produce like olives, lemons, and seasonal fruits in its dishes and cocktails.
The menu at Estiatorio Milos features signature dishes that highlight the rich flavors of Greek cuisine, such as the Milos Special, a tower of crispy zucchini and eggplant with Kefalograviera cheese and tzatziki; grilled seabass; and lobster Athenian pasta. The restaurant also offers a wide variety of Greek wines, the largest selection in Singapore. While the exact opening date and menu prices are yet to be announced, those eager to experience this new dining destination can sign up for the waitlist now.
