Rose Ang returns to Singapore after a 29-year culinary journey in more than 10 countries setting up popular restaurants in Europe and helping restaurants to innovate and increase sales. Internationally sought-after as a culinary creationist who is able cut to the core of a restaurant’s appeal and improve it, Rose’s impressive portfolio includes a 6-year stint in NOBU Group where she set up NOBU restaurants in Greece, Germany, Italy and Switzerland. She was also consistently headhunted to work for many 5-star hotel restaurants and high-profile international restaurant groups as Executive Chef or Head of Food and Beverage, such as the Marriott Group, Four Seasons Hotel, Kempinski and Hyatt Hotels and Saffron Group of Restaurants in Baku Azerbaijian, for which she was instrumental in the success of the restaurants she headed.
With DOMO, Rose explores her deep appreciation for traditional Japanese and contemporary European cuisine to celebrate their shared dedication for fresh, quality ingredients while accentuating Japanese simplicity and natural umami flavours. DOMO will present Japanese robatayaki (where food is grilled over hot charcoal at varying speeds) with modern European creativity that draws upon her extensive experience in Europe. Rose selected to use the robatayaki for its refined simplicity and open-flame cooking that brings out uniquely natural flavours with a touch of smokiness and char. Rose further adds her European culinary skills and creativity to the menu, such as presenting a teriyaki glazed meat grilled over the robatayaki with European spices to create a truly sensational blend of complementary flavours not previously captured in either Japanese or European cuisines.



Some of Rose’s Japanese-European fusion creations include starters such as the Tuna Tartare and Greek Feta Taco and Wagyu Beef Kimchi Goyza with Spicy Ponzu to exciting robata mains like the Tender Octopus with Shiso Dressing, and Japanese Wagyu Beef with Truffle Teriyaki. Even DOMO’s desserts feature east-west flavours that are lovingly matched in the Matcha-Misu and DOMO Arigato Grand Finale. Pre- or post-meal, patrons may get a drink and relax at DOMO’s bar which will showcase a range of cocktails such as DOMO Sour, Kiku Neguroni and Japanese whiskeys, sakes and European wines.
What further sets DOMO apart is its attention placed on the shared experience of dining. All of DOMO’s signature dishes from the charcoal robata grill, sushi bar and specialty kitchen are designed to be shared, elevating the dining experience beyond just the flavours of the food.
DOMO will also serve a chef-created Omakase which offers a tasting experience of all of DOMO’s signature dishes. In addition to the main dining area, robata grill and bar, DOMO boasts four differently-designed private dining rooms to suit different occasions.
