This restaurant is a tribute to Chef Dylan Ong’s mother, a former hawker who worked tirelessly to support her family. Known for his previous work at Saveur and The Masses, Ong now pours his passion into Choon Hoy Parlor. The retro-chic restaurant, with Mandarin and Hokkien karaoke classics, serves the soul food he grew up loving. It’s a significant shift from his training in French cuisine and the Franco-Asian dishes at The Masses, but it feels right. With the help of chefs Benji Chew and Renee Tang, he brings heirloom recipes to life, ensuring these cherished dishes are honoured and never forgotten.
