Cai Lin Ji brings the best of Hubei street food to Singapore with delicacies that are only found locally in Hubei such as the well-loved Zha Jiang Signature Hot Dry Noodles (zha jiang re gan mian) that is made fresh in-house daily. As its name suggests, the hand-pulled alkaline water based noodles are served dry, glossed over with a secret black sesame sauce combined with crispy and sour beans just before serving. Established in 1928 in Wuhan of Hubei Province, China, Cai Lin Ji has taken the humble hot dry noodles and introduced it to the world stage, earning the title “Top 10 Noodles in China”. It is proudly present in various prominent locations in Wuhan and covers the entire Hubei province with a total of over 300 stores and daily preparations of hot dry noodles reaching at least 30,000 servings in one morning.
In sharing more Hubei offerings exclusive to the region, the second outlet brings more signatures, such as Green Brick Tea, a variety of traditional festive dishes as well as iconic drinks for a comprehensive encompassing of Hubei’s flavours found nowhere else in Singapore.
Green Brick Tea, Prized Heritage Tea of Hubei
Available to diners for the first time in Singapore, savour Green Brick Tea ($6.80 per pot) that comes with a history that dates back over 1,000 years, preceding even the Ming Dynasty. Hailing from Chibi in Hubei, the hometown of brick tea is named after its iconic square shape, moulded from the raw material of old green tea pressed into bricks at high temperature.
The greenish-brown bricks steep up tea that is reddish-yellow in colour with a rich aroma, mellow taste and sweet aftertail. It is highly prized for its many health benefits, including fat reduction, weight loss, liver protection and gastrointestinal regulation.
