Fresh spring chicken is marinated for 24 hours with turmeric, ginger and a medley of spices, and then deep-fried to a golden-brown crunch. Juicy and flavoursome, the chicken is paired impeccably with aromatic, glistening grains of rice cooked with chicken broth, lemongrass and pandan leaves. A unique and delectable fusion, the Nian Gao Prata sees a chunk of rice cake sandwiched between the Indian flatbread. The interplay of chewy and crispy is highly addictive!
