At the heart of this collection is the semolina dough, baked at scorching high heat that “shocks” the dough, creating the signature puff and distinctive character of Neapolitan baking. This results in big, fluffy, cloud-like air bubbles that give it its unique bite. The use of wholesome semolina flour also creates a bread that is natural, airy, hearty and full of flavour.
