Boronas is a new Colombian bakery by Chef Fernando Arevalo, the mastermind behind Latido. Known for his famed house rye bread (pan de la casa), Chef Fernando first introduced this beloved creation at Latido, following its popularity at his previous restaurants, Bacatá and Preludio. Fans of his baking will agree that this rye bread is in a league of its own, making its availability beyond the restaurant an exciting development.
Now, he’s taken the best part of the menu and made it widely accessible. Boronas, which officially opened on March 19, is a pocket-sized bakery stall in Food Garden at Asia Square. The menu features a tight selection of fresh bakes and sandwiches, with the star attraction being the signature rye bread. Priced at $8, this bread is glazed with fermented mushrooms, segmented into five slices, and finished with thyme and salt. It pulls apart effortlessly, revealing a cloud-like texture, and comes with a side of smoked butter. Other breakfast highlights include La Mañanera, a Latin American staple featuring a sweet corn arepa with egg and avocado. For a heartier version, Latido offers the arepa stuffed with pork jowl and eggs, drizzled with smoked paprika sauce.
Beyond breakfast, Boronas offers a quick yet satisfying lunch with the Pan Y Fiesta, a pulled pork sandwich with arugula and pickled red onions. To complete the meal, there’s a selection of Colombian beverages, including the Chispa de Panela, a traditional lime-based drink with coconut and palm sugar, and the Cafe Colombiano, a classic Colombian drip coffee. With breakfast and lunch sets priced between $12 and $14, Boronas brings a taste of Latin America to the heart of Singapore.
