“1887 by André is my love letter to the city that shaped me,” shares Chef Patron André Chiang. Opening on 31 March 2026, Raffles Hotel Singapore unveils 1887 by André, its boldest culinary statement to date and the latest signature restaurant under the direction of one of Asia’s most influential chefs. Housed within the hotel’s historic formal dining room in the Main Building, the restaurant marks a new chapter in Raffles’ storied gastronomic legacy.
Named after the year Raffles Hotel Singapore first opened, 1887 by André is conceived as a journey through time—one that traces the evolution of the Grand Dame from its 19th-century origins to its place today as a global icon. More than a fine-dining destination, the restaurant is envisioned as a space for meaningful celebrations, cultural dialogue and timeless gatherings, designed to resonate not only in Singapore but across the region and beyond.
At its heart, 1887 by André is a refined expression of heritage gastronomy, where history, culture and craft are reinterpreted through modern French culinary techniques. Drawing inspiration from Singapore’s role as a global crossroads, the menu reflects layers of memory and influence, honouring tradition while embracing contemporary expression. A thoughtfully curated beverage programme complements the experience, bridging old and new worlds with quiet elegance.
Chef André Chiang’s return to Singapore as Chef Patron is both personal and symbolic. With over three decades of experience and training across Japan and France—including four Michelin three-star kitchens—André is the only Asian chef recognised by the Michelin Guide, The World’s 50 Best Restaurants and The Top 100 Chefs of the World. Known for shaping modern gastronomy in Asia through his Octaphilosophy, he approaches 1887 by André as both curator and mentor, reimagining heritage with purpose and forward vision.
Set within the grandeur of Raffles’ historic dining room, the experience unfolds with precision and restraint. From the flow of service to the smallest design details, every element is carefully composed to create an immersive, intimate journey through time, place and craft. Each visit invites quiet discovery, connection and celebration—moments designed to linger long after the final course. Reservations are now open.
