Impressing regulars and first-timers alike with its diverse and well-executed menu since the opening of the flagship store at Wheelock Place, UYA at Oasia Hotel Novena also boasts a line-up of unique outlet-exclusive dishes that puts the spotlight on the restaurant’s specialty; pristine and quality live eels that are flown in directly from the fisheries weekly, and prepared a la minute in various tantalising renditions by the team of chefs led by UYA’s experienced Japanese head chef.
Diners can look forward to tucking into NEW moreish bites that are crafted to pair impeccably with UYA’s selection of Japanese sakes, and other alcoholic tipples including shochu and beers.
At UYA, bigger and meatier live eels of a specific weight are procured directly from select purveyors and meticulously-prepared a la minute in the kansai-style. They are first sliced open along its belly with a small specialty knife, then skewered carefully so as not to pierce through the skin. After a dip in UYA’s proprietary tare; this is the mother sauce that has been consistently topped up over the years since the opening of its first store, the unagi is then grilled over hot charcoal until the skin is slightly crisp while the flesh retains a moist and fluffy texture.
