Two private dining rooms – King Arthur Private Room and Dalmore Private Room – set the stage for more intimate wining and dining experiences. These enclaves provide the perfect space for casual get-togethers with friends and important business meetings alike, while food and wine fuel conversations.

The Culinary: Artistry on Every Plate
Begin with starters like Signature Gambas al Ajilo ($28), a classic taste of Spain featuring whole shelled prawns grilled in fragrant garlic chilli oil and served with garlic chips and homemade bread. Creamier indulgences can be found with the Seasonal Burrata Salad ($26), where a whole burrata from Italy is dressed with kale pesto and texturised with pumpkin seeds for crunch, topped with fig for a touch of sweetness.
Eat your greens with the Grilled Cabbage Melange ($22), a vegetarian-friendly dish of shredded cabbage cooked sous vide before grilled to lend it a veil of smokiness. It is then tossed in a dressing of homemade Manchego sauce with honey mustard drizzle and mixed with puffed buckwheat, roasted pine nuts, spring onion, and white sesame seeds.
Bolder flavours are served with the 36 Hours Lamb Shoulder ($48), The lamb is marinated in green harissa paste for 24 hours, then cooked sous vide for 12 hours. Following that, it is grilled over charcoal to caramelize its surface for the perfect bark before being garnished with cream leek, black garlic puree, charred onion, and a dollop of avruga caviar. More lamb jus awaits to add flavour within a ring of pea puree laced with dill oil.
Carbs come laden with the Foie Gras & Parsley Creamy Rice ($36), a risotto-style rice dish simmered from Japanese rice infused with homemade parsley paste, sweetened with dashi, and garnished with pickled onion and truffle vinaigrette. Crowning the masterpiece are whole prawns and medallions of foie gras for full indulgence.
Proteins are equally wholesome with Poulet Farci à la Perfection ($36), a whole breast of chicken that is incredibly rendered from being cooked sous vide before stuffed with foie gras for extra lashings of umami. A finishing of fried kale seasoned with salt, potato puree with truffle oil, and chicken jus infused with white wine and dill oil complete the dish.
Lovers of red meat will revel in the OP Rib ($198-1kg|$208-1.1kg|$218-1.2kg|$228-1.3kg),a generous rack of rib first rubbed with a homemade spice before grilled over charcoal fire to release the best flavours and juices. Relish in the full-bodied game with a side of tomato salad, homemade horseradish cream, chimichurri, homemade red wine mustard, and beef jus.
The Drinks: Exceptional Whiskies and Wines
Of the labels in the cellar, keep your eyes peeled on the Macallan 30 YO Sherry Oak. An exceptionally rare and prestigious whisky, this 30-year whisky is aged in sherry oak casks, making it one of the most exclusive expressions from Macallan. Dalmore King Alexander is matured in six different types of casks, making it one of the most unique whiskies in the market.
Wine lovers can look forward to Pierre Andre Pommard, a prestigious Burgundy wine from one of the most renowned appellations in the Côte de Beaune, Chateau La Patache Pomerol, which is one of Bordeaux’s most exclusive appellations known for producing some of the world’s finest Merlot-based wines, and more.
