The new and exquisite Jumbo River Prawn Thermidor (S$32) debuts as Dusk’s interpretation to the classic European Lobster Thermidor. Grilled over Binchotan charcoal and drizzled with a tangy yet mildly-spicy peanut Béchamel sauce, the sweet and juicy Asian river prawns are transformed into a culinary masterpiece, offering a harmonious blend of smoky flavours and creamy textures that elevates the dining experience to new heights of satisfaction.
All-time favourites will continue to delight guests, ensuring that the flavours they have come to love, remain a part of their dining experience. Among these are the popular Dusk Signature Prawn Capellini (S$28), featuring succulent tiger prawns and sautéed angel hair pasta infused with the harmonious flavours of Japanese kombu and prawn-infused oil, and the rich and savoury French-Cut Rack of Lamb (S$88) that features a charcoal-grilled Australian lamb rack paired with red wine sauce, vine tomato, and garlic confit, charred over the Robata charcoal grill.
The dessert selection has been reimagined with a unique, contemporary twist. The Vanilla ‘Feng Li’ Crumble (Pineapple) (S$16) combines East-meets-West flavours, featuring delightful vanilla custard topped with pineapple gelee and coconut sorbet, with a hazelnut crumble base, offering a refreshing finish to a hearty meal.

Guests can select between a 3-course, 4-course, or 6-course meal starting from S$78++, featuring popular dishes like Fjord Trout Confit or Mushroom Cappuccino Soup for an appetiser, and main courses like charcoal Grilled Australian Hanger Steak or Boston Lobster.
