Pastaro, a new restaurant by Chef Willin Low, has opened at Chancery Court, offering a menu of local fusion pastas like Hokkien-mee pasta. Unlike its sister restaurant, Relish by Wild Rocket at Botanic Gardens, Pastaro is a bit hidden and can be challenging to find. Located in the building housing CS Fresh, it sits on the second floor with a window view overlooking the supermarket’s interior. Guests can access the restaurant through a lift lobby at the side of the building, guided by signs that help direct them to this cozy spot.
Once inside, diners will find an intimate space adorned with warm browns, greens, and mustard-hued cushions, creating a comfortable and elegant atmosphere. The focus at Pastaro is on fusion pasta that brings local and regional flavors to classic Italian dishes. The menu includes a few well-known options, like carbonara fettuccine and spicy vongole fettuccine, but the real highlights are unique dishes such as buah keluak spaghetti. This dish features a deep-brown chicken and buah keluak curry, offering a rich, earthy taste with a hint of acidity that captures the essence of the Peranakan staple in a new way.
Pastaro also reimagines other local flavors, like the Singapore fried noodles—essentially Hokkien mee reinvented as a pasta dish using handmade flat noodles that mimic the texture of the original. Another standout is the laksa pesto spaghetti, which defies expectations by forgoing the usual rich, coconut-forward profile in favor of a more herbaceous, grassy flavor. While pasta is the main attraction, the menu also includes a variety of sides to complement these unique, carb-centric creations.
