Renowned Dutch chef Sergio Herman is set to open Le Pristine at the newly refurbished Grand Hyatt Singapore in October. Chef Herman, who previously helmed the three-Michelin-starred Oud Sluis in the Netherlands, brings his culinary expertise to Singapore, adding to the city’s impressive roster of celebrity chef-led restaurants. Following the success of his first two Le Pristine locations—one in Antwerp, which earned a Michelin star, and another in Tokyo, now listed in the Michelin Guide—this will mark the Southeast Asian debut of his casual fine dining concept.
Le Pristine Singapore promises to showcase Chef Herman’s unique interpretation of Italian flavors, using ingredients sourced from Zeeland, a coastal province northwest of Antwerp known for its fertile soils and fresh seafood. Diners can look forward to experiencing Herman’s distinctive culinary style, which emphasizes the natural tastes and textures of high-quality ingredients, presented with elegant simplicity. The Singapore outpost will also feature dishes incorporating local influences, reflecting Herman’s commitment to adapting his menu to the region while staying true to his culinary roots.
The experience at Le Pristine goes beyond the food, as Chef Herman has also curated the dining space to reflect his passion for music, art, design, and fashion. The interiors of the Singapore branch will evoke the same ambiance as the Antwerp original, enhanced by art pieces from prominent Dutch and Belgian artists, including the Rotganzen art collective and Maarten Baas. The launch of Le Pristine Singapore follows the extensive renovation of Grand Hyatt Singapore, which reopened in July, and will occupy the space formerly held by the buffet restaurant mezza9, which closed in 2022.
