Originally known as “san” or light cake, the traditional Kueh Tutu was a simple rice flour cake without any filling, steamed in trays. The distinctive Singaporean twist came with the addition of ground roasted peanuts or grated coconut with brown palm sugar fillings. Mr. Tan Tuan Chiang, inspired by his father’s trade over 50 years ago, dedicated himself to perfecting the art of Tutu Kueh. In the bustling streets of Chinatown, the Tans’ push-carts became iconic fixtures. Mr. Tan’s commitment to authenticity led him to pound whole rice grains into rice flour, ensuring a pure white cake. The flour, meticulously sifted multiple times, resulted in the characteristic lightness of the cakes. Each cake is then filled, steamed, and served on fragrant pandan leaves.
