Translating to “wagon wheel pizza”, this proprietary style of pizza is distinguished by its large 15-inch thin base, with edges that extend and drape ever so slightly over the plate beneath it.
In true Neapolitan style, each pizza is light and airy, boasts a characteristic char, and holds a carefully-calibrated amount of quality fresh ingredients – it really is simplicity at its best. The pizzas at L’Antica Pizzeria da Michele are crafted with a traditional, time-honoured recipe using quality Caputo flour and baked in a customised Stefano Ferrara Napoli – a domed brick oven custom made in Italy that is the pride of all da Michele outlets worldwide.
In addition, the restaurant directly imports key ingredients from the south of Italy to render a pizza that is as authentic as possible. Highly-prized and coveted for its quality, Agerola Fior di Latte, or ‘flower of milk’ cheese from the Agerola region is renowned for its distinctively mild, delicate flavour and semi-soft, creamy texture.
Cetara anchovies is another outstanding ingredient sought after for its intense and refined savoury profile.
