Soup Restaurant celebrates its 32nd anniversary and has launched three new outlets, namely Little Teahouse and CAFE O.
Little Teahouse Bugis — indulge in Chinatown-style dim sum all day long.
Paying tribute to the teahouses that dotted Chinatown during the 1950s to 1970s, Little Teahouse is a casual and quick-serve dim sum place that does not charge any service fee. Its menu comprises a wide selection of over 35 handmade dim sum as well as familiar local favourites such as chee cheong fun, congee, individual rice bowls and mainstays such as Char Siew Wanton Noodles and Spicy and Sour Dumplings. Prices begin from $2.90 onwards.
The concept’s speciality dishes will certainly delight dim sum lovers. They include the Samsui Ginger Chicken Bao, a new dish inspired by Soup Restaurant’s heirloom dish. Now, the juicy chicken comes wrapped in a bun! Diced chicken is marinated with young ginger, which imparts a sharp note that cuts through the poultry’s sweetness. A special technique is required to ensure that the chicken retains its succulence and juiciness. While already good on its own, the dish is best eaten with a topping of the classic Samsui Ginger Sauce for that extra punch of flavour.
Another highlight is the Majie Chives with Pork Dumpling, which commands attention thanks to its XL size. The filling for this traditional pork dumpling consists of minced pork as well as a copious amount of chives, which absorbs the broth and juices of the pork.
The Bugis outlet will also offer three exclusive dishes: Little Teahouse Signature Egg Tart, Lychee Prawn Ball Mozzarella Cheese and Mushroom Truffle Bao. For the Little Teahouse Signature Egg Tart, the filling is an egg pudding, which is a holy matrimonial of creamy custard and crème brûlée. Boasting a slightly charred and caramelised texture, the pudding is encased within a flaky and crumbly pastry skin.
A unique creation, the Lychee Prawn Ball with Mozzarella Cheese promises a gratifying mouthfeel and a refreshing taste. Bits of lychee are embedded within a juicy prawn ball. At its centre is gooey mozzarella cheese, so get ready for that fun cheese pull! All the ingredients are then wrapped in a layer of rice cracker, which delivers crunch with every bite. Not to be missed is the Assorted Mushroom Truffle Bao, which calls for a blend of shiitake and golden mushrooms. The mushrooms are then mixed with truffle paste, which awakens the senses with its aroma. Shaped like an actual mushroom, the fluffy bun is further coated with cocoa and charcoal powder to complete the look.
